Chianti Classico Riserva 2009 – Castello Il Palagio
We produce our Chianti Classico Riserva 2009 only with our best grapes destined for the famous Black Rooster wine.
The grapes come mainly from the vineyards located around the winery and Pieve di Santo Stefano a Campòli. The hills havean average altitude of 350 meters above sea level.
Our vineyards have an average age of 10-15 years. They are made up of a percentage of 90% of Sangiovese, plus 10% is made up of: Colorino; Merlot; Malvasia Nera.
The Sangiovese grapes are mostly sparse and medium-sized clones.
We have a density of 6000 vines per hectare, with a maximum yield of 1,200 kg of grapes per plant.
The soils that host the vineyards that produce our Chianti Classico Riserva are mainly composed by: a shield of clayey shale (galestri); with insertions of alberese (calcaric stones) ; fine limestone sandstones. All characteristics suitable for wines that require long aging.
From 2009 , we decided no longer used any herbicide! We dream land that is full of life with earthworms under the soil, bees, bumblebees, butterflies and ladybugs above.
The grapes used for Chianti Classico 2009 are the result of a rather balanced season, until the month of June following a rainy winter.
May had temperatures higher than the seasonal average, favoring a rapid flowering.
The rains in June created good water availability capable of coping with the high temperatures and drought of the summertime.
High temperatures, during summer were detected until the first week of September. This, however, without altering the good vegetative balance, thanks to the significant temperature changes.
This balance continued throughout the month of September and saw, after the expected arrival of the rain, the decisive return of the sun. The sunshine days got the consequent complete ripening of the grapes.
Chianti Classico winemaking process Reserve 2009
We made hand grape harvest that began on 28 September 2009. It was characterized by an ideal climatic trend which allowed perfectly ripe bunches to be brought into vats.
The grape must had excellent aromatic persistence and good acidity which allowed longevity. This guarantee drinkability to the Chianti Classico Riserva 2009 “Castello Il Palagio” for at least 15 years after the vintage.
The fermentation took place in steel silos at a maximum temperature of 24 ° c – 75 ° f and continued for 21 days.
Then we pressed the marc of fermented grapes and started malolactic fermentation in Slavonian oak barrels.
On the next racking, the wine was partially returned to; 3000 litres Slavonian oak barrels for 2/3; and 1/3 in french Limousin oak tonneaux.
After 48 months in wood, we assembled the two masses together and then bottled on 05 September 2015.
Organoleptic characteristics and food pairing
Its color is a lively ruby red with garnet reflections.
At the nose has mineral aromas of: goudron; hints of dark chocolate; spices. You can perceive on the palate, hints of spicy tannins. They are consistent and soft at the same time, involving flavour in the finish.
We recommend pairing with; roast pork and game; grilled tuscan steak and sausages. Try also with: beef loin with baked potatoes and seasoned cheeses like Parmigiano Reggiano and Pecorino Toscano. Unforgettable with dishes based on truffles and porcini mushrooms.
We also suggest Chianti Classico 2011 Riserva, Castello Il Palagio.
